What to trim and how much

I want to do a seat cover with foam bonded to the vinyl. I plan to top stitch along all the seams. This example I made a simple seam good to good and trimmed one seam allowance close and then top stitched. I've also tried trimming just the foam of one one seam allowance so that I still catch 2 layers of fabric on the top stitch pass but the seam is a lot bulkier. Will the seam still hold up okay if I trim the seam allowance both fabric and foam like this picture?

Not very in focus but you get the idea. Tensions were off on the first pass thus the hair ball on the backside

I separate my sew foam from the face material and trim it back as far as I comfortably can in the seam allowance after you sew the two pieces together. This will leave just your top material on the back side making for a much less bulky seam. It takes more time to do it this way and you need to be careful not to cut into your stitching, but the end result is much nicer.
